These happened recently. Ok, maybe they’re not the prettiest..I was rushing a bit..but they taste good and that’s what matters, right?
These copycat thin mints were super easy to make. They only took 3 ingredients! Who would have thought? I originally saw the idea here and changed it a bit to suit what I had on hand.
You just need:
– some chocolate for melting (I used chocolate chips)
– “ritz” style crackers
– peppermint essential oil (Find out what brand I prefer and why, here.)
Using a double boiler or the microwave, melt the chocolate. I didn’t measure; I just put a fair amount in a bowl, maybe 3/4c or so, and started with that. If you’re using the microwave, heat it the chocolate in 30 second increments and stir before heating more to ensure you don’t burn it.
Stir in 2 or 3 drops of peppermint essential oil. Taste test the chocolate to make sure it’s pepperminty-enough.
Dip your crackers in and place them on a tray with wax paper or parchment paper. I put mine in the fridge to set because it’s been really warm here all week and we don’t have AC; there was no way they’d have set at room temperature.
Lick the bowl! I gave the kids a bunch of pretzels and the bowl of leftover melted chocolate. I won best Mom award in their eyes, that day.
