I decided the kids and I should do some baking yesterday, and wanted to use some frozen raspberries that my step-mom had given me last summer. I didn’t have a recipe specifically for raspberry muffins, but I altered a recipe I had for blueberry cornmeal muffins and they turned out really good.
Preheat oven to 400F
1 1/4 cup flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup small berries (or you can chop up strawberries)
1 cup milk
1/4 cup oil
Combine dry ingredients, then add the wet, then mix in the berries. Divide into greased muffin tin, bake for 20-25 mins. Makes 12.
I used a muffin-top tin, which is shallower than a regular tin, and they were done in closer to 17 minutes.
