I know, I know. Honey comes from bees. But if you have dandelions and no bees, this is a yummy alternative! It may not be as healthy as honey because it uses processed sugar but it tastes surprisingly similar to honey and makes for a good treat.
Making dandelion honey is a bit time consuming (mostly just letting the honey simmer) but fairly easy and hard to mess up. Perfect for letting the kids help!
- 4 cups dandelion heads
- 4 cups water
- 1 sliced lemon or orange
- 1/2 tsp vanilla
- 2-1/8 cups sugar
- Rinse your flowers and pick off the yellow petals from the dandelions. Try to get as little greens in there as possible; too many green leaves will make the honey bitter.
- Put them in a large pot with the water, vanilla, and sliced lemon or orange. Bring to a boil then reduce heat and simmer for 30 mins. Let sit for several hours; 2 minimum, but overnight is best.
- Strain the mixture with a fine sieve or cheesecloth, squeezing or pressing hard to get as much liquid out as possible. Discard solids.
- Replace the liquid back into the pot and bring to a boil. Reduce to a simmer and slowly add the sugar, stirring to dissolve as you go. Simmer until it thickens. This will probably take at least a couple of hours. When the honey starts to thicken, put some on a dish to cool. It will thicken more when cooled so you do this to check if it’s the right consistency. If you cool the whole batch and then realize it’s still too thin, you can boil it again to reduce it more. Store in airtight container or jar.
Serve on toast, biscuits, pancakes….whatever you would put honey on or in! Enjoy 🙂
