You read that right, a nutritious meal with 5 minutes of prep work. I’m not kidding you! And this soup is so thick that it fills you up for a while!
-1 leek, thinly sliced
– 4 medium carrots, chopped
-4 medium potatoes, chopped
-salt and pepper to taste
That’s it! Just dump it all in the slow cooker, add 5-6 cups of water, and cook until the veggies are all soft. I start mine on high in the morning and it’s ready by lunch. Before serving, puree it with an immersion blender or put in through your regular blender. I sprinkled a bit more pepper and some salsa seasoning on top of mine…yum! This is a very basic, fool-proof recipe. Change it up to suit your taste!
