I’ve been wanting to make up some freezer meals for a while but I never seem to get around to it. Now that baby #4 is due in just a few weeks (I’m almost 36 weeks now, but you can check out my 33 week pregnancy update here) I really need to get cracking!
The only problem was, I didn’t really know where to start. The easiest meals to make are pastas and casseroles, but I wasn’t sure how the noodles would turn out if frozen.
So, I asked the lovely ladies on my Facebook page (if you’re on Facebook, please join us!) for ideas and tips. Here is what was shared!
Anelle: “Soups are good as are casseroles and some pasta dishes.”
Lee Ann: “Stuffed shells!!! I make a big batch of shells and a big batch of spaghetti sauce. that would mean you have sauce to make say slppy joes, spaghetti eggplant parm (you can do the eggplant ahead and freeze too! What about freezing some shepards pie? and bread dough for rolls and stuff. chicken pot pie filling, soups,”
Lee Ann also said that regarding freezing pasta dishes, “cook it al dente that way when you finish cooking it it wont be too soft. also cover with foil so noodle edges don’t get hard.”
Adrienne: ” baked spaghetti/penne are favorites, pot pies freeze really well too, anything that goes into a crockpot can be prepped and frozen ahead of time and all you have to do is thaw and dump, 2x baked potatoes, homemade pizzas, spaghetti sauce. Also, Taco meat freezes really well!”
Alissa: “Lasagna is one of my fave meals to freeze. Everytime I make it I make a couple pans so I can freeze them. ”
Some of my ideas:
- Freezing chicken in marinades in freezer bags. It will marinate itself as it thaws.
- Meatloaf. I bake mine in muffin tins so that it cooks faster and is easier to freeze and thaw.
- Stew is good for the winter! You can make a big batch in the crock pot.
- Large batches of chili and spaghetti sauce. My husband makes HUGE batches in our electric roaster, so we have about 12 or 14 meals-worth of each. I just learned the hard way when Tobi was born to not count on these meals for the post-partum period; it might be too acidic for a nursing baby.
