
Yesterday I mentioned that I made cocoa waffles for the kids’ first day of homeschool and I thought I should share the recipe. It was so quick to put together. I made these using my homemade baking mix as the base.
You Need:
- 2 cups baking mix
- 1-1/3 cup milk
- 2 Tbsp oil
- 1-2 Tbsp cocoa powder, to taste
You do:
- Start heating up your waffle maker first.
- Mix all ingredients. Your mixture doesn’t have to be perfectly smooth.
- Grease your waffle maker and start making waffles! I don’t have to grease my waffle maker between each set of waffles; I just re-grease it when the waffles start to stick. How often you need to grease your waffle maker just depends on what you have. I use a quick spray of cooking spray.
- Eat and enjoy!
*Yields about 10 waffles.
*These freeze very well. I doubled the recipe then cooled the waffles completely before freezing in a large ziplock bag, squeezing out as much air as I could. To reheat, take them out of the freezer and toast like the commercial frozen waffles.
