I used to hate coffee. Couldn’t stand the taste of it. I would even work 12 hour overnight shifts on a busy floor of a psychiatric hospital, and not have any coffee.
And then I had my 3rd child. Who doesn’t sleep well.
So I started drinking flavoured coffees (well, cappuccinos from Tim Hortons.) Yay for caffeine! I still don’t like plain coffee, but if the coffee taste is hidden enough, I can drink it. And then I tried a latte for the first time a couple of months ago. It took a few times to get used to it, but now, yum! So I tried a gingerbread latte at my church’s cafe. Big yum!
My mom sent us some money for Christmas this year, in case weather prevented a family get-together, so I bought some yarn with some of it, and a Tassimo machine with the rest. Ok, more than the rest..I guess I spent too much of it on the yarn…
And as I was looking up recipes, I found one for gingerbread syrup! It’s really easy to make, and tastes great in lattes and hot chocolates. It would probably taste good in a cappuccino too, but I haven’t tried that yet.

In medium saucepan (I learned the hard way that you want a medium one..because the moment it comes to a boil, it foams..a lot), combine:
2 cups water
1-1/2 cups white sugar
2-3/4 tsp ground ginger
3/4 tsp ground cinnamon
1/2 tsp vanilla
Stir and bring to a boil. Once it reaches a boil, reduce heat and simmer, uncovered, for 15 minutes. Store in closed container in the fridge. Shake before use, and use 1 oz (2 Tbsp) per drink (or more, to taste.)
