Did you know you can make your own sun dried tomatoes? I’ve wanted to try using them in several recipes but when I looked at the store, sun dried tomatoes are so expensive! I couldn’t justify the cost for just a few pieces of tomatoes.

To oven dry your tomatoes:
First, make sure you use small tomatoes. I made the mistake of using large tomatoes and they took almost 2 days to dry. Roma tomatoes are suggested.
Turn on your oven to it’s lowest setting. I realized after a while that it would probably go faster if it was set on broiler.
Cut each tomato in half, and remove the stem. Lay them on a cooling rack and sprinkle them with salt (sea salt is recommended but not necessary.) Make sure the tomatoes are not touching each other.
That’s it. It can take all day, depending on the size of the tomatoes, so I’d start them early in the morning.
I think I might try actually sun drying them the next time I have several tomatoes ready, but we haven’t been able to count on hot sunny days for a while and my tomatoes were getting a bit over-ripe.
